Have you ever wondered why French women are so thin and yet they eat a diet rich in butter and cream? Or why women who eat a Mediterranean diet which includes quite a bit of cheese don't gain weight? It's the fat.

The idea was if you want to lose fat don't eat fat. And in a way that makes sense. Fat is one of the most calorie rich foods around. Fat is satisfying and keeps hunger pains at bay. Fat is not just the rich marbling in a prime cut of aged steak but also the olive oil in the salad dressing, sour cream on the baked potato, butter on the bread, and cream in the strawberry shortcake for dessert. Cut down on fat, cut down on calories and you'll cut down on your weight, or so it seemed.

Unsaturated fats, such as olive oil, nuts, and seeds, have been known to increase "good" cholesterol. Saturated fats such as butter, cream, cheese, and animal fats were thought to have little or no redeeming value. But that's all changed.

There are a number of different kinds of saturated fats. People usually consume only three kinds: stearic acid, palmitic acid and lauric acid. The liver converts stearic acid into monounsaturated fatty acids like olive oil. That's a good thing because those healthy fats decrease cholesterol absorption by 50 % and also block artery clogging fat.

Palmitic acid and lauric acid increase bad cholesterol (LDL) but at the same time they boost good cholesterol (HDL) so the effect for the most part is cancelled out.

Here's the good news for people on a fat loss program. Replacing carbs in the diet with fats speeds fat burning. Eat fat to lose fat. It doesn't matter whether the fat is a saturated fat like butter or unsaturated fats. Dieters lost 33% more fat that those who didn't replace carbs with fats. Keep in mind this is a substitution program not an "in addition to" program. Don't think you can add butter, a trans fat, to your toast, a carb, and lose weight faster. Replace the toast with a poached egg and then add the butter as in hollandaise sauce on a bed of spinach.

Full fat dairy products is an easy way to swap fat for carbs. Have a full fat yogurt sweetened artificially instead of your morning bagel and jelly. Use sour cream mixed with fresh herbs as a dipping sauce for your spicy but breadless chicken wings instead of a sweet and sour or teriyaki sauce. Use cream in your coffee instead of sugar.

Eating fat the right way can mean you lose fat the quick way.
