Some will say the best diabetes diet is to limit starchy foods such as bread, potatoes, rice, pasta. They say this because these starches break down into sugar. If you have diabetes is means you are not processing sugar well. It means the sugar in your blood is too high. The thinking is if your body can't handle sugar than cut it out.
Complex carbohydrates are good and simple carbohydrates are bad. Choose brown rice over white rice. Choose whole wheat bread over white bread. Choose sweet potato over regular potato.
The problem is not with carbohydrates itself. The problem is the way your body processes them. Your body processes complex carbohydrates a lot better than it does simple carbohydrates. Studies have been done in Asian countries whose staple diet is healthy carbohydrates. Diabetes in these countries was not a chronic problem like it is in the United States. These countries also didn't have the weight problem that the United States has.
Some will tell you avoid carbohydrates because you will gain weight. Many more experts will tell you this is false, but actually prove that losing weight is more likely with a complex carbohydrate diet. The right carbohydrates will actually help you lose weight. Complex carbohydrates have little fat and no cholesterol.

Dr. Barnard says that limiting complex carbohydrates is not a smart idea to reverse diabetes. He has found that you can eat a lot of complex carbohydrates and actually be better off, not worse. Complex carbohydrates help prevent diabetes.
A study was conducted at the University of Kentucky who were put on a diet of vegetables, fruits, whole grains, and high fiber beans. It was almost all vegetarian with minimal animal fat. In a short period half were able to stop taking their insulin.
One of the key's in Dr. Barnard diet plan is to cut out animal fat from your diet. When he started experimenting with his diet method he allowed the participants to eat as much healthy carbohydrates as they wanted. There were no portion controls.
Dr Barnard's diabetes control diet participants lost 16 pounds, and fasting blood sugar dropped 28 percent. This all happened in 12 weeks on the diet. Many were able to reduce or stop using their medicine. Dr. Barnard claims better results than the American Diabetes Association diabetes control diet plan.
One major reason to not eat animal products is because they are generally loaded with unhealthy fat. Insulin has a difficult time doing its job in cells with fat.
The diabetes diet is pretty straight forward, it involves three rules
1. Don't eat animal products.
2. Use vegetable oils sparingly.
3. Eat low glycemic index carbohydrates.
Dr. Barnard also warns against animal protein such as egg whites. This is because animal protein causes problems with your kidneys. You will rarely find experts agree on diet and eggs are no exception. Jonny Bowden, PHD, C.N.S the author of the book The 150 Healthiest Foods on Earth identified the super healthy foods with stars. He put a star on eggs and said eggs are "nature's most perfect food."
Dr. Blaylock in the Blaylock Wellness Report says to not be worried about the cholesterol in the egg yokes. Egg yokes have important healthy nutrients.
If you look on the glycemic index, pasta such as spaghetti is lower on the scale than bread. This is because bread is processed more. Bread contains yeast and the bread making process essentially starts the digestive process before you put it into your mouth. Pasta does not go through this process.
Fiber is a key ingredient in your diabetes control diet. Fiber has many health benefits. Fiber digests slower, causing reduced spikes in blood sugar. Your staple food groups are the following;
1. Whole grain
2. Legumes
3. Vegetables
4. Fruit
Summary: If you have diabetes or want to avoid it the diabetes control diet will help. The key with this diet is to focus on complex carbohydrates with tons of fiber and limit or eliminate animal foods.
